Serves 4 - ready in 30 minutes
You will need:
- 1 red onion and 1 red chilli
- 1 red and 1 yellow pepper
- 2 garlic cloves
- 4 x 4oz / 113g chicken breasts
- teaspoon oil
- 2 tablespoons curry powder
- 3 ½fl oz / 100ml passata
- 4fl oz/113ml chicken stock (made with Bovril)
- Salt & freshy ground black pepper
- Chopped fresh coriander to garnish
Method:
- Prepare the ingredients:
- peel and thinly slice the onion
- de-seed and thinly slice the chilli
- de-seed and cut the peppers into thin strips
- peel and crush the garlic and cut the chicken into bite-sized chunks
- Place the oil in a pan and cook the onion, chilli, garlic and chicken for 5-6 minutes. Add the curry powder and cook for a further 1-2 minutes before adding the passata and stock.
- Bring to the boil, stir in the peppers and cook gently for 15-20 minutes until the chicken is cooked through. Season well, remove from the heat and serve garnished with chopped coriander.
Can be served with jacket potatoes, rice, pasta or noodles.
