CHILLI CHICKEN WITH MIXED PEPPERS
 

Serves 4 - ready in 30 minutes

You will need:  

  • 1 red onion and 1 red chilli
  • 1 red and 1 yellow pepper
  • 2 garlic cloves
  • 4 x 4oz / 113g chicken breasts
  • teaspoon oil
  • 2 tablespoons curry powder
  • 3 ½fl oz / 100ml passata
  • 4fl oz/113ml chicken stock (made with Bovril)
  • Salt & freshy ground black pepper
  • Chopped fresh coriander to garnish

Method: 

  1. Prepare the ingredients: 
  2. peel and thinly slice the onion
  3. de-seed and thinly slice the chilli
  4. de-seed and cut the peppers into thin strips
  5. peel and crush the garlic and cut the chicken into bite-sized chunks
  6. Place the oil in a pan and cook the onion, chilli, garlic and chicken for 5-6 minutes.  Add the curry powder and cook for a further 1-2 minutes before adding the passata and stock.
  7. Bring to the boil, stir in the peppers and cook gently for 15-20 minutes until the chicken is cooked through.  Season well, remove from the heat and serve garnished with chopped coriander.

Can be served with jacket potatoes, rice, pasta or noodles.
